Shamrock Chips

For a St. Patrick's Day, these shamrock chips are as easy as they come.

What you need:

  • Tortillas
  • Olive Oil Spray
  • salt
  • Shamrock cookie cutter

OR

  • cinnamon 
  • butter

What to Do:

  1. Press the cookie cutter into the tortilla hard. You made need to move it around on the hard surface back and forth, working the cutter all the way through the tortilla. 
  2. Place the cut shamrocks onto a baking sheet. You can make these one of two ways, as salted chips, or as cinnamon chips.
    • For salted chips: Spray the cut shamrocks with olive oil spray, then salt. 
    • For cinnamon chips: Brush the shamrock cut outs with butter, then sprinkle with cinnamon. 
  3. Place in the oven and bake for 7-10 minutes at 350. Watch them, they burn fast!

 

 

 

Chocolate Chip Banana Muffins!

Last night I made these super easy and quick Chocolate Chip Banana Muffins. I followed the recipe straight from www.weelicious.com, as I was looking a breakfast muffin that was fast and tasty to make! In yet another effort to find a different recipe to use up my old bananas, this one was perfect for my toddler because it cuts the fat and sugar. Thanks to another good recipe from Weelicious

Ingredients 

  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup agave nectar (I used agave nectar, but you can also use honey!)
  • 1 large egg
  • 2/3 cup milk
  • 3 tablespoons canola oil 
  • 2 ripe mashed bananas
  • 3/4 cup semi-sweet chocolate chips (or dried fruit or nuts)

Directions

  1. Preheat the oven to 400.
  2. Combine the first four ingredients in a bowl.
  3. In a separate bowl, whisk together the agave nectar (or honey), egg, milk, oil, and bananas.
  4. Slowly combine the dry ingredients to the wet.
  5. Stir in the chocolate chips.
  6. Pour the batter into a greased or lined muffin tin. I usually use my 1/4 measuring cup to scoop out the batter and fill the cups, but the batter should be about 2/3 of the way up.
  7. Bake for 18 minutes. 
  8. Cool and serve!

As you can imagine, these are so yummy with the melted chocolate fresh out of the oven.  


Banana Oat Bran Muffins

Amongst my friends and roommates, I am known for making banana bread. I have made the same recipe for several years from my oldest Betty Crocker cookbook. I have made different variations of it, from adding different ingredients (like pecans or chocolate chips), to making it with a brown sugar topping. It's yummy, but so full of sugar it is not the healthiest in the least. I'll share the recipe here sometime. It's a good one. 

Given the amounts of sugar and butter my old recipe uses, I have kept my eye out for other recipes I could make with old bananas. I still haven't found a healthy banana bread recipe that I love. I have seen recipes which replace oil with applesauce, but so far when I have done that, I don't like it. It ends up being mushy and weird. Keep trying? Of course. 

That being said, today I decided to try a recipe out of my Weelicious cookbook by Catherine McCord. I love her stuff. She has great healthy family friendly recipes. Her version of this muffin is made with wheat germ, but you can use oat bran or flax seed instead if you don't have that. I used oat bran, which is more of a coarse grain that went well with these muffins. 

If you're looking for a healthier version of banana bread muffin to give your kids, this is an easy and good alternative! 

INGREDIENT LIST: 

  • 1 cup of flour
  • 1 cup of oat bran (or wheat germ, or another likewise substitute) 
  • 1 teaspoon of baking soda
  • 1 teaspoon of salt
  • 3 medium sized ripe bananas (mashed)
  • 1 large egg
  • 1/2 cup of agave nectar or honey
  • 2 tablespoon canola or vegetable oil
  • 1 tablespoon of vanilla extract

DIRECTIONS: 

  1. Preheat the oven to 350. 
  2. Whisk flour, oat bran, baking soda, baking powder, and salt in a bowl.
  3. Mix the mashed bananas, agave nectar, oil, vanilla and egg until well combined. I used my handheld mixer.
  4. Slowly add the dry ingredients to the wet until combined, but do not over mix. 
  5. If you are using a mini cupcake tin, bake for 15 minutes. If you are using a regular muffin pan like I did, bake for 20 minutes. 
  6. Once cooled, you can serve these with almond butter, peanut butter, jam, honey, or just by itself!

Homemade Granola Bars

I decided to make my own granola bars for Caleb. He loves bars. I got this recipe from Weelicious, with the directions and ingredient list recounted below. Making these was a success! It's easy to do with items you already have on hand, and picky toddler approved! What isn't approved that doesn't have chocolate chips though, right? :)

Ingredients: 

  • 4 cups old fashioned oats
  • 1/4 cup whole wheat flour
  • 1/2 cup shredded unsweetened coconut
  • 1/3 cup brown sugar
  • 1 cup chocolate chips (or other dried fruit like raisins) 
  • 1/2 teaspoon kosher salt
  • 1/2 cup canola oil
  • 1 teaspoon vanilla extract
  • 1/2 cup honey

Directions: 

Preheat the over to 325 F. Combine the first 6 ingredients in a bowl. In a separate bowl, whisk together the remaining ingredients. Pour the wet ingredients over the oat mixture and stir to combine. 

Place the granola mixture on a parchment lined baking sheet. I used a 9 x 13 baking pan. 

Bake for 40 minutes, and allow to cool completely. Cut into bars.

These bars last for weeks. I kept mine in tupperware, but you can also individually wrap them to keep them fresh longer.

Apple Bundt Cake

Fall is my favorite season, even if it is the watered down version we get here in Southern California. As the months and years go by, I want to continue to do different things to mark each season. For me, fall brings out apples and pumpkins and cinnamon. I love it all.

I decided to look for some apple recipes to try and came across a recipe for Apple Cake. I don't even think I have even heard of Apple Cake before. It was supposedly a healthy version. I question how healthy it is, but compared to other recipes it seems better. The purpose of me making this is to try something new with apples, while having something yummy and easy to give Caleb when he is awake before I am able to think clear thoughts. So I try to have breakfast things that are not sugar filled and unhealthy. A few days ago I made Oatmeal Muffins which he liked, and which were totally healthy. This might be meant for more of a dessert, so I cut the sugar  in hopes of making it more breakfast friendly.

APPLE CAKE
My first time making this and baking in a bundt pan! All these years and I am finally getting around to it!

Ingredients:

1/2 cup light margarine
1 cup of sugar (I used 2/3 cup instead to cut down on the sugar in the recipe)
6 oz nonfat vanilla yogurt
1 egg
2 tsp vanilla extract
2 1/2 cups flour
2 tsp baking soda
2 tsp cinnamon
1/2 tsp salt
4 apples cored and chopped (You can leave the chopped apple pieces peeled or with the skin on. Leaving the skin on increases the fiber intake!)


1. Get a mixing bowl and cream the margarine and sugar together. You make sure the margarine is room temperature. Mine wasn't but it was easily spreadable so I had no problem. You just mix the margarine and sugar together. Yes, I am using a baby spoon in a small bowl. I realized right after that I would need to change that.


2. Add yogurt, egg, and vanilla and beat until fluffy. I am thinking that my "fluffy" might be more watered down more. Oh well, it still turned out okay.

3. Combine dry ingredients and mix well.

4. Stir into creamed mixture. The dough becomes thick and sticky.

5. Stir in apples.

6. You can put the batter in a 9x13 baking dish sprayed with nonstick spray, OR you can use a bundt cake pan.  Bake for 50-60 minutes at 350 degrees, or until a toothpick comes out clean. I took mine out closer to 45 mins because my oven runs hot.




It turned out good! I am always open to any suggestions on how to make something healthier, while still being good. This could easily be turned into more of a dessert item with more sugar and glaze and brown sugar etc. 

DIRECTIONS in one spot:
1. Preheat oven to 350.  In a mixing bowl, cream the margarine and sugar together.
2. Add yogurt, egg, and vanilla and beat until fluffy.

6. Bake in a 9x13 baking dish (I am sure any pan you want is fine). Spray pan with nonstick spray. Bake for 50-60 minutes at 350 degrees, or until a toothpick comes out clean.
